Ingredients:
1 cup quinoa
1 large avocado, diced
1 can of black beans (about 400 g), washed and drained
1 red bell pepper, diced
1/2 red onion, finely chopped
fresh cilantro or parsley for garnishing
For the dressing:
juice of 1 lemon
3 tbsp. olive oil
salt and pepper to taste
Preparation:
Rinse the quinoa under cold water.
In a large pot, cook quinoa in salted water until tender, according to package directions. Discard in a colander and let drain.
In a large bowl, combine quinoa, avocado, black beans, red pepper and red onion.
In a bowl, mix together the lemon juice, olive oil, salt and pepper for the dressing.
Dress the salad with the dressing and mix well.
Serve the salad immediately, garnished with fresh cilantro or parsley.
